Diy pop Cakes
Pop Cakes

Ingredients
- 285g shop cake loaf
- 125g full fat soft cream cheese
- 100g each dark, milk and white chocolate
- Edible coloured polka dots or mini coloured sugar balls to decorate
Method
- Slice the cake, then crumble with your fingers into a bowl until you have fine crumbs. Beat in the cream cheese and squish together with your fingers.
- Roll the cake mix into about 18 even sized balls about the size of a walnut. Meanwhile, melt the chocolate in three separate heatproof bowls set over pans of barely simmering water, making sure the bottom of the bowl does not touch the water, and remove from the heat. Dip the end of eighteen 15cm lollipop sticks in a little of the melted chocolate and stick into each cake pop.
- Working quickly, drizzle the cake pops with the melted chocolate, turning as you spoon over the chocolate. You will have one-third of the cake pops coated in dark, then another third in milk and another third in white chocolate. Let the excess chocolate drain off then pop into a glass for the cake pop to start to dry.
- Just before the cake pop is set, sprinkle with a little edible coloured polka dots Leave to set and eat and enjoy the same day as making.
